Cookies, Bars & Candy

ELEANOR’S CHRISTMAS CAKE COOKIES 
Eleanor Geib, Winnipeg, MB

1 ½ cups seeded raisins ½ cup sour milk
1 ½ cups seedless raisins 2 cups flour
1 ½ cups currants ½ tsp soda
½ cup candied citron ½ tsp salt
1 ½ cups almonds 1 tsp cinnamon
1 ½ cups glazed cherries 1 tsp nutmeg
½ cup butter 1 tsp cloves
1 ½ cups brown sugar 1 tsp allspice
3 egg yolks 3 egg whites
Wash raisins and currants. Place in shallow pan and put in over for ½ hour at 200° . Cut other fruit. Blanch almonds. Spread in pan to dry. Chop. Mix fruit together and flour fruit. Cream butter, sugar, egg yolks, sour milk and add to mixture. Add fruit and nuts. Fold in beaten egg whites. Drop onto greased baking sheet. Bake at 325° for 25 minutes. Makes 10-11 dozen cookies.
