Cakes, Pies and Desserts

WASHINGTON PIE 
Betty McLeod

1/3 cup shortening 3 tsp baking powder
3/4 sugar 1/4 tsp salt
2 lightly beaten eggs 1/2 cup milk
1 1/2 cups flour 1 tsp vanilla
Cream shortening and sugar, add eggs. Mix dry ingredients together, and add to above mixture alternately with mixture of milk and vanilla. Bake in 2 shallow pans at 350 degrees for 20 minutes. Cool.
Cream filling:
7/8 cup sugar 1/3 cup flour
2 cups milk 1/8 tsp salt
2 eggs 1 tsp vanilla
Cook in double boiler until thickened. Cool. Split cakes and fill with cream mixture. Top with whipped cream.
