FRESH STRAWBERRY FLAN 
Alice McGilvery, Kirkfield Park United, Winnipeg, MB

1/2 cup butter, softened 1/4 cup icing sugar
1 cup flour
Cream butter. Blend in flour and icing sugar. Mix with hands to make a smooth dough. Press evenly in 9 inch flan ring. Prick well with fork. Chill 15 minutes. Bake at 425 degrees for 7 -10 minutes. Cool.
Filling:
1 pkg. (8 oz) cream cheese 1-1 1/2 pints strawberries, halved
1/2 cup icing sugar 1/2 cup currant jelly (red)
1/2 tsp vanilla 1 tsp lemon juice
1/2 cup whipping cream
Beat cream cheese, icing sugar and vanilla together until smooth. Whip cream until stiff and fold into cheese mixture. Spread evenly in prepared shell. Chill. Arrange strawberry halves over top. Melt jelly and lemon juice together. Brush or spoon over strawberries to glaze. Chill. Makes one 9 inch flan.
