MOTHER'S CHRISTMAS CARROT PUDDING 
Donna Peck-Harland, Kirkfield Park United, Winnipeg

1 cup grated carrots 1/2 lemon
1 cup grated potatoes 1 orange
1 1/2 cups suet 3/4 cup flour
1 1/2 cups brown sugar 2 tsp cinnamon
1 1/2 cups seedless raisins 1 tsp cloves
1 cup currants 1 tsp salt
1 cup mixed fruits (as for Christmas Cake) 1 tsp soda
Mix vegetables, suet, brown sugar and fruit. Put 1/2 lemon and orange through food chopper or fine disc of food processor. Sift flour, spices, salt and soda together. Add to previous mixture. Place in 6 cup casserole, pudding pan, or fill soup or tomato tins (for individual puddings). Double the mixture for family size and add 1/4 cup more flour. Cover each pan with wax paper and foil, tie tightly over the top. Steam 2 1/2 - 3 hours. Each year our UCW unit makes these puddings for our Christmas Bazaar.
