Cakes, Pies and Desserts

UCW DARK CHRISTMAS CAKE 
Saltcoats UCW, Saltcoats, SK

4 lb. sultana raisins 3 lb. red and green cherries
2 lb. dark raisins 4 pineapple rings, chopped
2 lb. mixed fruit
Mix above with 4 cups flour
Make a batter of:
2 lb. butter 3 tsp soda
2 dozen eggs 1 tsp each cloves, mace, cinnamon
1 cup molasses 2 tsp each allspice and nutmeg
8 cups brown sugar 2 cups grape juice
10 cups flour 1 cup lemon, orange or apple juice
Mix fruit into batter, place in pans and bake 3-4 hours at 275 degrees. We usually add more juice or flour as needed. We quadruple the recipe and use it as a fundraiser.
