Muffins, Quick Breads and Pancakes

BANANA AND PEANUT BUTTER FRENCH TOAST 
Vera Cushing, Cabri, SK

1 Tbsp peanut butter 1/2 tsp vanilla
4 slices brown bread pinch salt
2 bananas pinch cinnamon
2 eggs 2 tsp butter
1/3 cup milk
Spread peanut butter on bread. Slice bananas lengthwise, place on bread and make 2 sandwiches. Whisk together other ingredients except butter. Soak sandwiches in this mixture, turning to soak up mixture. Add butter to a non-stick skillet heated to a medium temperature. Brown sandwiches on both sides. Makes 2 servings for breakfast or a light supper.
