Muffins, Quick Breads and Pancakes

HUNGARIAN PANCAKES (CREPES) 
Anita Warriner, Alameda, SK

2 eggs 1 tsp vanilla
1 cup water 1 tsp baking powder
2 cups milk 2 cups flour
Put all ingredients in blender and mix until smooth. Batter is very thin and needs to be rolled around the frying pan to spread out. Cook in non-stick skillet or well-seasoned cast iron skillet at medium high temperature. These are very versatile and can be filled with jam, icing sugar and butter, ham and cheese, or even leftovers. Spread the filling on, roll them up, and enjoy.
