Muffins, Quick Breads and Pancakes

CRANBERRY APPLE OAT MUFFINS 
Donna Peck-Harland, Kirkfield Park United, Winnipeg

1 cup buttermilk or sour milk 1 cup flour
1 cup quick cooking rolled oats 1/4 cup sugar
1/2 cup grated peeled apple 1 Tbsp baking powder
1/4 cup packed brown sugar 1 tsp salt
1/4 cup vegetable oil or Melted butter 1/2 tsp baking soda
1 egg, slightly beaten 3/4 cup dried cranberries
Grated rind of 1 lemon 1/2 cup walnuts or pecans
1/4 cup cranberry sauce
Preheat oven to 400 degrees. Pour buttermilk over rolled oats. Let soak 10 minutes. Mix apples, cranberry sauce, brown sugar, oil, egg and lemon rind. Stir into oat mixture. Sift flour, granulated sugar, baking powder, salt and soda. Stir into batter until just moistened. Gently stir in cranberries and nuts. Spoon into prepared muffin tins, 20-25 minutes until tops are firm to touch. Makes 12-15 muffins.
