Muffins, Quick Breads and Pancakes

MINCEMEAT BRAN MUFFINS 
Helen Cooper, Chaplin, SK

2 eggs, beaten 2 1/4 cups flour
3/4 cup oil 1 1/4 cups bran
3/4 cup sugar 2 tsp baking powder
1/4 cup molasses or brown sugar 2 tsp baking soda
2 .c milk 1 tsp salt
1 1/2 cups mincemeat
Beat eggs with oil and sugar. Add molasses, milk and mincemeat and beat together. Blend in dry ingredients. Bake in greased muffin tins at 375 degrees for 15-20 minutes. Remaining batter will keep tightly covered in refrigerator for up to 3 three weeks.
