Muffins, Quick Breads and Pancakes

ICELANDIC BROWN BREAD

1 Tbsp yeast 2 tsp salt
1 tsp white sugar 5 cups whole wheat flour
1/2 cup lukewarm water 1 cup blackstrap molasses
4 1/2 cups lukewarm water 1/2 cup oil
1/2 cup honey 2 Tbsp vinegar
Combine yeast, sugar, and 1/2 cup water and let stand 10 minutes. Mix other ingredients, then add yeast mixture. Let rise until double in size, then knead and shape into loaves. Let rise until double in size, then bake at 400 degrees for 45 minutes.
