Muffins, Quick Breads and Pancakes

WHOLE WHEAT RAISIN BREAD 
Alice McGilvery, Kirkfield Park United, Winnipeg, MB

1 3/4 cups whole wheat flour 2 egg whites
3/4 cup toasted wheat germ 1 cup evaporated skim milk
1 tsp baking soda 4 Tbsp liquid fructose
1 tsp baking powder 1 cup raisins
1 tsp cinnamon
Preheat oven to 350 degrees. Combine dry ingredients. Combine liquid ingredients, add to the dry ingredients and mix well. Add raisins. Spray loaf pan with Pam. Pour mixture into pan. Bake 50-60 minutes or until well browned on top. This recipe can be made as a round loaf also. Press into round pan. Bake as above.
