Muffins, Quick Breads and Pancakes

TOMATO CHEESE BISCUITS 
Agnes Lee Harland, formerly of Emo, ON

2 cups flour 2/3 cup tomato juice
4 tsp baking powder 1 Tbsp sugar
1/2 tsp salt 1/2 cup grated cheese
2 Tbsp butter
Sift together flour, baking powder, salt. Cut in butter with two knives or pastry blender. Gently blend in tomato juice and sugar. Lastly, add cheese and mix in lightly. Turn out on floured board and pat to about 1/2" thickness. Bake at 450 degrees for 12-15 minutes. Can be cut with fancy cutters. Delicious spread with chicken salad.
