SANTA FE CHICKEN 'N RICE

6 boneless chicken breasts 1 1/4 cups chicken broth
1 Tbsp vegetable oil 1 cup salsa
1 Tbsp finely chopped garlic (3 cloves) 1 ripe avocado, peeled and sliced
3/4 cup diced onion 1 ripe tomato, chopped
1 cup Uncle Ben's rice 1/2 cup cheddar or Monterey Jack cheese, shredded
Heat oil and brown chicken breasts on each side. Remove from pan and set aside. Season with salt if desired. Sauté garlic and onions in same pan for 2 minutes. Add rice, chicken broth and salsa. Mix well and bring to boil. Place chicken breast on top of rice. Cover tightly and reduce heat to medium low. Simmer for 15 - 20 minutes. Garnish with avocado, tomato and shredded cheese. 6 servings.
