WAIKIKI BEACH CHICKEN 
Donna Peck-Harland, Kirkfield Park United, Winnipeg

1 whole chicken cut up or 6 - 8 chicken breasts 1 tsp salt
1/2 cup flour 1/4 tsp pepper
1/2 cup oil
Sauce:
14 oz. can sliced pineapple
1 Tbsp soy sauce
1 cup sugar 1 tsp ginger
2 Tbsp cornstarch 1 cube chicken bouillon
3/4 cup vinegar
Coat chicken with flour mixture. Heat oil. Brown chicken in frying pan. Place chicken in baking dish. Sprinkle well with salt and pepper. Drain pineapple into 2 cup measuring cup, set aside slices. Add water to pineapple juice to make 1 1/4 cups. Place in saucepan with remaining sauce ingredients, bring to a boil and boil for 4 minutes. Pour over chicken. Bake uncovered for 30 minutes at 350 degrees. Place pineapple slices on top and bake covered for 30 minutes more.
