MASHED POTATOES WITH HAM

1/2 cup finely chopped onion 1 1/2 cups cubed fully cooked ham
2 Tbsp butter or margarine, divided 1/8 tsp pepper 
3 1/2 - 4 cups hot mashed potatoes (prepared with milk and butter) 1/2 cup grated cheddar cheese
1/4 tsp onion salt 1/3 cup crushed corn flakes
In a large microwave safe bowl, combine onion and 1 Tbsp butter. Microwave, uncovered on high for 2 minutes or until tender, stirring once. Add potatoes, ham, onion salt and pepper: mix well. Transfer to a greased 1 1/2 quart baking dish. Sprinkle with cheese and cornflakes. Dot with remaining butter. Place in 350 degree oven to melt cheese and brown slightly - approximately 8 - 10 minutes.
