Main Dishes

ITALIAN STEW - HUNTER STYLE 
Marlene Taylor, Kirkfield Park United, Winnipeg, MB

2 lbs. stewing beef 1 tsp salt
3 Tbsp olive oil 1 1/2 tsp seasoned salt
6 small onions, peeled and halved 1/2 cup chopped parsley
2 cloves garlic, crushed 1 cup water
1 small can tomato paste (5 1/2 oz.) 28 oz. canned tomatoes
1 Tbsp flour 3 large carrots, cut in 1 inch pieces
1 tsp chili powder 8 oz. macaroni
1 tsp oregano 1/3 cup grated parmesan cheese
1 tsp rosemary
Heat olive oil in Dutch oven - add beef and cook until lightly browned. Add onions and garlic and continue cooking 5 minutes. Combine tomato paste, seasonings, tomatoes, parsley and water. Bring to a boil, lower heat and simmer 1 hour 15 minutes. Add carrots and simmer 45 minutes. Cook macaroni and stir in and heat. Stir in parmesan cheese and serve immediately with lots of warm, crusty bread. (6 servings)
