EASY OVEN STEW FOR A CROWD 
Rapid City MB UCW

7 lbs. stew beef 3/4 cup minute tapioca
7 medium onions, chopped 1 1/2 tsp salt
3 1/2 cups chopped celery 3 1/2 tsp onion soup mix
12 medium carrots, sliced 7 medium potatoes
48 oz. tomato juice
Mix all ingredients except potatoes together in large roaster. Cover and cook at 250( for 4 hours or until meat is tender. Stir a few times (no browning is necessary). Cube potatoes in 3/4 inch pieces and boil (just before needed) until not quite cooked. Drain and add to the stew about 20 minutes before serving. They will finish cooking in the stew and not become mushy. Yields about 25 servings. This is a delicious stew with a minimum of effort.
