Salads and Side Dishes

2 Tbsp oil Salt to taste
1 large onion, chopped 1 inch cinnamon stick
1 inch piece of fresh ginger, grated 1 tomato, chopped
1 lb. (500 gr.) chopped spinach 1 cup cottage cheese
1/8 tsp (or more) chili Pepper flakes or grains 1/4 cup water
3 cloves garlic, minced 1/2 tsp cumin
Heat oil, then add onion and ginger and fry until browned. Add spinach, chili pepper, garlic, salt, cinnamon stick and cook for 10 minutes. Then add tomato, cottage cheese and water and cook for 10 more minutes. Sprinkle with cumin after it is in the serving dish. This is originally from a Mennonite Central Committee cookbook.
