Salads and Side Dishes

POT BARLEY

2 cups pot barley 4 cups chicken broth, divided
1/2 cup celery- chop finely 2-4 bay leaves
1/2 cup onion- chop finely
Fry celery, onion, and barley together with a bit of oil until golden. Add 2 cups of chicken broth. Bake at 350( for 30 minutes. Add 2 more cups chicken broth, and bay leaves. Then bake an additional 45 minutes. This is a nice change from rice or potatoes.
