Salads and Side Dishes

GREEK SALAD 
Edith Docking, Teulon, MB

1 head romaine lettuce, torn 2 tomatoes, cut into chunks
Calamata olives, as desired Feta cheese, broken into small chunks
1 med. red onion, sliced into rings 1 bunch fresh cilantro, torn into small pieces
1 English cucumber, cut into chunks 1 Tbsp dried oregano, crushed in hands
Dressing
juice from 1/2 lemon olive
oil equal to lemon juice
Toss the salad ingredients. Toss with dressing at serving time. (The cilantro has a wonderfully fresh flavour!)
